Watermelon Mint Lemonade

Watermelon Mint Lemonade is the ultimate refreshing drink, perfect for hot days and summer gatherings. Ingredients & Substitutions

Sugar: The sugar acts to sweeten the syrup and evenly through the lemonade. The sugar also acts as preservative for the simple syrup to extend its shelf life. In this recipe I used monk fruit sugar but stevia sweetener would also work without using processed sugar. 

Monk fruit sweetener is great because it is anti-inflammatory, it doesn’t affect blood sugar levels, and it metabolizes differently than regular sugar. It also has zero calories.

Mint: Mint can help relieve indigestion, bloating, and discomfort. It is also rich in antioxidants that help protect the body from oxidative stress. Also mint is a flavor enhancer which has a distinct, refreshing, cool taste. 

Water: In this recipe water is used in making the simple syrup and act as a solvent that dissolves the sugar. A 1:1 ratio of water to sugar is a standard way to create a syrup.

Lemon: Lemons are a powerful source of vitamin C, which supports the immune system. Lemon juice can also help stimulate digestion and flush out toxins. The flavor brings a bright, tangy flavor that balances the sweetness of the watermelon and syrup.

Watermelon: Watermelon has a high water content, which helps keep you hydrated. Watermelon is also rich in vitamins A and C, which are beneficial for skin health and immune function. It is also is naturally sweet, which can reduce the need for additional sugar in your lemonade.

Type of Simple Syrup

If you do not like the taste of mint this recipe can be easily adjusted by not including the mint in the simple syrup. You can also buy simple syrup at the store but it will most likely contain preservatives, artificial chemicals and colors.

Type of Mint

In this recipe I used mojito mint which is my favorite in beverages. This is because mojito mint has more of a mild flavor with a hint of citrus. Where as spearmint has a much stronger flavor. You can purchase mojito mint at most grocery stores, for this recipe you only need one 0.75 ounce package. Or you can take it from your fresh herb garden, and you can also make save a few for garnish if you wish.

How to Blend

Though a stand blender would be easier and less time consuming an immersion blender will also do the trick. To make it easier to strain, blend until all the chunks of watermelon are turned into a liquid. I saved a few watermelon chunks for the bottom of my glass at the end. This adds a different texture and something to chew on.

Making the Syrup

When making the simple syrup on the stove make sure to heat the mixture until the sugar dissolves into the water. This will ensure that the syrup doesn’t have a grainy texture.

The steeping time after the mixture comes together is important as well. This time allows the flavor of the mint leaves to fully combine into  the syrup. The longer you let the leaves steep the stronger the flavor.

Ingredients

  • 1 cup of monk fruit sugar

  • 1 package (0.75 oz) mojito mint

  • 1 cup water
  • 8 cups chopped watermelon (half of a medium sized)

  • 5 lemons squeezed

Directions

  • Rough chop mint leaves and place in sauce pan on medium heat with sugar and water

  • Stir often and leave for 10 minutes or until sugar dissolves

  • Remove from heat and let mint leaves steep in the syrup

  • Blend chopped watermelon until smooth

  • Strain watermelon mixture through a cheese cloth into a bowl or jar (now you should have 5 cups juice)

  • Juice all 5 lemons

  • Pour lemon juice, watermelon juice and 1 cup of the mint simple syrup into a pitcher

  • Can be served immediately over ice or stored in the fridge for about 5 days (mixture will separate just mix back together). Enjoy!
